1 dressed chicken (cut into pieces)
1 cup thick coconut milk
Salt and pepper to taste
½ cup vinegar
1 cup thin coconut milk
2 cloves garlic
In a cooking pot, boil one cup of thin coconut milk then drop the chicken. When chicken is tender, add thick coconut milk, vinegar, garlic, salt and pepper to taste. Boil for five minutes and remove from fire. Serve hot!
½ cup glutinous (malagkit) rice
2 small packages raisins
3 green peppers
½ teaspoon atsuwete (anatto or bixa orellana)
3 cloves garlic
½ cup white rice
½ small chicken cut into desired pieces
3 ripe tomatoes cut into small pieces
1 small onion cut into small pieces
1 tbsp. cooking oil
Fry the garlic, onion, and tomatoes in a frying pan. When garlic is brown, drop the chicken and cook for five minutes. When done, add the green peppers, salt, and stock colored with atsuwete. Cook for five minutes. When the mixture is well blended, add enough water to cook the rice, raisins, and chicken. Transfer the mixture to a cooking pot and cook over in a slow fire. Mix well once in a while to prevent from burning.
